so with eating healthy there is a fairly large time commitment. food prep and assembly can get pretty time consuming especially when using lots of fresh veggies that all need to be cleaned or cut in certain ways.
the other day i was making some salsa and thought "hey, since i'm cutting up onions - and i KNOW i will need chopped onions through the week, why not just cut up a little batch to have on hand. that will save a major step in virtually anything i could want to cook.
so i did.
fast forward about 7 days and i had used only a mere fraction of the onions that were ready and on-hand.  i was going to use some more, but when i opened up that container i bout fell backwards, knocked my head on the counter, got a contusion only to be discovered hours later.... (watching too many episodes of bones on netflicks lately).  in other words. that stank was RANK!
so i bagged and bagged again the contents to throw away so my garbage can would not forever be putrid. then i rinsed out the container and put it in the dish washer.
a few hours later i open up the dish washer to put more dirties in when POW!the green fog that always accompanies foul odors gave me a jab to the face that would have sent me spinning around on one leg and then flopping over to the side where little stars would be circling my head (was listening to a debate about tom and jerry between some high schoolers the other day).
so just chalk that little science experiment up to another "good idea. bad idea" - shout out to animaniac fans.

 these are another "gluten free" snack that may not translate to "good for you". but i would argue it is good for your emotional health. i mean seriously. how can you look at those and not be happy?
